Sweet Cheese pies (Lyhnarakia) with farina
INGREDIENTS
For the pastry:
- Farina Mills of Crete 2 kg (4 packages)
- Sugar: 650 gr. (3 cups)
- Extra virgin olive oil ABEA: 500 gr. (2 cups)
- Milk: 125 gr. (Λι cup)
- Yogurt: 100 gr. (5 tablespoons)
- Salt: 5 gr. (1 teaspoon)
- Eggs: 6 mediums
For the filling:
- Sweet mizithra: 2 kg
- Sugar: 300 gr.
- Butter: 20 gr. (1 tablespoon)
- Cinnamon: 15 gr. (1) spoon)
- Vanilla: 2 sachets
- Eggs: 2 yolks
- Honey: 4 tbsp
- Lemon zest: 1 tbsp
- 2 yolks beaten for spread
IMPLEMENTATION
Beat the oil with the sugar and add the 2 beaten eggs, salt, yogurt, milk then slowly the flour. Knead them all together well and let the dough rise. We grate the myzithra. Add 2 egg yolks, vanilla, honey, zest, half a spoon of cinnamon and butter, then mix. Gradually add the sugar and mix well. We spread the dough to create a medium thick sheet and cut it into round shapes. We take a filling with a teaspoon of liquid and put it in the center of each sheet. We make light bulbs by “pinching” the dough all around. Glaze the light bulbs with the 2 yolks, after beating them, and sprinkle with cinnamon. Place the light bulbs in a buttered pan and bake in a moderately preheated oven for 30 minutes.
