Salty cake with a variety of cheeses
INGREDIENTS
mixture a:
- Butter (cow milk) 250gr. or 1 & 1/4 teacup
- Staka Butter 150gr. or 2/3 teacup
- Extra virgin olive oil ABEA 100ml. or a teacup
- Salt 15gr. Or 1 tbsp
- Sugar 15gr. Or 1 tbsp
- Grated lemon
- Fresh black pepper crushed into chunks (a tablespoon)
mixture b:
- Eggs 600gr. or 10 eggs
mixture c:
- Mills of Crete All Purpose Flour 4 & 1/2 teacups
- Baking powder 40gr. or 2 tablespoons
mixture d:
- Cretan white cheese (feta type) 300gr. or 2 teacups
- Graviera cheese 200gr. or 1 & 1/2 teacups
- Smoked cheese from Metsovo 200gr. or 1 & 1/2 teacups
- All cheeses cut into small cubes. Feta cheese can be coarsely ground.
IMPLEMENTATION
Blend together the ingredients of the mixture A in the mixer or by hand until fluffy.
Then add mixture B.
With the help of a flexible spatula, we blend together mixture C with the combined mixtures A and B and we stir until we achieve a homogenous consistency.
Finally, add the ingredients of the mixture D stirring gently.
Bake in a preheated oven at 170 – 175 C for 45 minutes.
