Herb pie with Vlita (Amaranth Greens)
INGREDIENTS
Filling:
- 1 kg vlita (Amaranth greens)
- 2 cloves of garlic
- fresh onions
- 2 bundles of parsley or plenty of fresh mint
- salt, pepper
- 4 tablespoons extra virgin olive oil
Ingredients for the fillo pastry:
- 1/2 kg Cretan mills flour
- 1 cup ABEA extra virgin olive oil
- 1 cup water
- Salt
- Yeast
IMPLEMENTATION
Chop the vlita and sauté with plenty of chopped onions, parsley, garlic, salt and pepper. Then let it cook and drain. Mix the ingredients for the pastry, knead them together and spread them to create 2 thick pastry sheets. Spread one sheet on the bottom of a baking tray and layer the vlita on top. Use the other sheet to cover the mixture then glaze the pastry with olive oil or butter. Oven bake in medium temperature until the pie is covered with a golden-brown crust.
