INGREDIENTS
- 1 1/2 kg yearling lamb (chest not leg)
- 2 glasses of AVEA extra virgin olive oil
- Salt
- Pepper
IMPLEMENTATION
Wash the meat well, cut it into small pieces and let it dry in a bowl for 2-3 hours. Pour the oil into the pot and before it burns, add the meat, stirring often, on a very high heat, until it turns white. Then, lightly season with salt and pepper, close the pot, lower the heat to half and let it cook for 1 1/2 -2 1/2 hours. Caution: Do not put any water and serve the meat almost dry and not floating in the oil.
